Mexican Rice

Yield: 4 Servings
Ingredients:
1 cup Rice
1 Teaspoon Chili pepper, chopped
green
2 T Salt
1 cup Tomatoes
2/3 cup Raisins
2 Bacon slices
1 T Oil or fat
1 Onion, small chopped
1 T Chili powder
1 Garlic, small clove chopped
1 1/2 cup Water
1 lb Hamburger steak, raw
Method
1. Wash and drain the rice. Wash raisins in hot water and drain.
2. Heat half the oil in a frying pan, add washed rice, and fry to a light brown, stirring occasionally to prevent burning.
3. Remove rice, add remaining fat, then fry the hamburger, onion garlic, and chili pepper for about ten minutes; add salt tomatoes, and chili powder which has been dissolved in one- fourth cup of cold water.
4. Allow the mixture to cook for a few minutes, then mix with the rice and raisins.
5. Pour into a baking dish, add water, and lay the strips of bacon over the top.
6. Bake until rice is tender, about forty-five minutes in a moderate oven (350 to degrees F.) If bacon gets too brown, cover the dish for part of the baking.
